Odia dishes are unique in their flavors and aroma. They have less oil and spices but have strong pungent flavors. One such flavourful dish is chicken Patra Poda (chicken roasted in banana leaves). Check the recipe out.
Odia Cuisine has always been underestimated by a lot of people but once you taste I’m sure you can never forget them. Odia dishes are simple yet distinctive. Odia dishes are known for being flavourful, but with less oil and spices than most other Indian States. Today we will speak about one of the most loved and delicious recipes i.e. Chicken Patra Poda this means (Chicken wrapped in banana leaf and then roasted till it’s cooked). So let’s hop into the recipe.
Ingredients Needed to make Chicken Patra Poda:
- 500gm of Chicken (Boneless)
- 1 Large Onion (Chopped)
- 1 Large Tomato (Chopped)
- ½ inch Ginger (Semi-Crushed)
- 6 cloves of Garlic (Semi-Crushed)
- 6-7 Green Chillies
- Coriander leaves (Handful)
- ½ tbsp chili powder
- ½ tbsp turmeric powder
- 2 tbsp Curd
- 1 tbsp Lemon juice
- 3 tbsp Mustard oil
- Salt as required
- For Mustard Paste
- 3 tbsp Mustard seeds
- 2 tbsp cumin seeds
- 1 tbsp Coriander seeds

Procedure:
In a large bowl place the chicken and add all the ingredients i.e. ( Onion, tomatoes, ginger-garlic paste, mustard paste, red chili powder, green chili, turmeric powder, mustard oil, curd, and coriander leaves ) except the lemon juice. Let it marinate for 30 minutes or more.
Now take a banana leaf wash it properly and then dry it. Coat mustard oil to one side of the banana leaf.
Lightly roast the banana leaf over low flame for 30 seconds. With this technique, while we roast the leaf it won’t break.
Now just before adding the chicken marinate to the leaf add the lemon juice to get a balanced flavor.
Place 2 small pieces of banana leaves on the center, now place the marinated chicken on it, wrap it like a parcel with the help of a thread.
Heat a pan and grease with a little oil, now place the chicken parcel on it. Cover with a lid for 15 minutes.
After 15 minutes flip it to the other side in low flame and now cook for more 15 minutes.
Atlast to get the perfect roast flavor cook in high flame or 3 minutes for both the sides.
Enjoy this Odia delicacy with hot steamed rice.
